Avocado Dip This is good for anywhere, but due to the simplicity of preparation, it is a favorite thing to bring in the cooler when camping! 1 large avacodo 1 16-ounce container plain yogurt 1 tomato fresh cilantro tortilla chips Peel and remove skin from avacodo. Remove seed. Finely chop cilantro and dice tomato. Place ingredients in mixing bowl and mash until avacodo becomes a smooth paste. Add yogurt and mix well. Chill for 30 minutes, then serve with tortilla chips. I make this, put it in a storage container and toss in the cooler. It is a great treat for when you are setting up the first meal of the trip or when trying to hold off the hunger pangs when while grilling on the deck. Serves 6.
