Last week was a very expensive week, but oh so good and a well deserved treat! Well, here we are with a little bit of this left in the freezer, a little bit of that left in the fridge, a pantry full of ideas, and $50 to get me through another week. This is what I came up with…and yes, you can make a complete balanced meal with fried rice and pasta salads for dinner. Are those dinner meals as tasty as a steak and baked potato? NO! Are they nourishing and satisfying? YES! I challenge all to consider that they only have $50 to come up with three meals and snacks for a week! Learn to use what is available to you…with shortages happening all over the country, now is the time to start learning how to work with available products.
Breakfast:
Sunday – sausage, egg, and cheese bagel
Monday – waffles and maple syrup
Tuesday – BLT bagel
Wednesday – egg and cheese bagel
Thursday – Belvita cinnamon-brown sugar biscuit
Friday – breakfast salad with apples, blueberries, and strawberries
Saturday – breakfast salad with apples, blueberries, and strawberries
