      Asparagus Vinaigrette
      1/2 lb.asparagus, trimmed of woody ends
      1/4 cup vinegar (balsamic, raspberry, sherry, or some other sweet vinegar)
      1 tbs Dijon mustard
      3/4 olive oil
      1 tsp fresh thyme leaves or 1/4 tsp. dried
      •alt and pepper to taste
      Bring water to boil in a skillet, add asparagus, and cook until tender, 7 – 8 minutes. Vigorously whisk all remaining ingredients together and drizzle over asparagus.

      Add salt and pepper to taste. 2 servings.
