2 ts Grated lemon zest
1 Garlic clove; mince
3 lb Pork loin; trim all visible

1 tb Hoisin sauce
1 tb Chinese plum sauce
1 To 2 ts chili paste
1/4 ts Salt
1/8 ts Freshly ground pepper

Grated orange zest
Minced crystallized ginger
Grated lime zest
Brown sugar
Chopped pine nits
Ground cumin
COLUMN B
Hot-pepper jelly
Sour-cherry preserves
Orange marmalade
Honey mustard
Basil pesto
Mango chutney
COLUMN C
Black pepper
Asian five-spice powder
Sesame oil
Bourbon
Minced shallots
Yogurt
Heat oven to 325~. Combine zest and garlic. Cut slits
in pork at 1/2″ intervals and add lemon mixture; press
in. Roast 40 minutes. Combine remaining ingredients
and use to baste pork. Cook until thermometer
registers 155%. Cal 306; Fat 12 gr; 35% fat; Fiber 0
gr.
