Artichokes with Herb Sauce:wink: 1/2 tsp sugar 2 tbs virgin olive oil 1-1/2 tsp Dijon mustard 1 tsp tarragon 1 tbs white wine vinegar 2/3 cup 1% cultured buttermilk 4 artichokes 1 clove garlic, crushed 1 green onion, chopped 3 tbs sun dry tomatoes, minced (don’t have ’em? don’t use ’em!) Place artichokes in a steamer basket over a generous amount of boiling water. Cover saucepan and steam 40-45 minutes, or until a knife is easily inserted into stem end of artichoke.
Combine remaining ingredients and salt and pepper to taste in a jar with a tight-fitting lid. Shake vigorously. Serve artichokes with dipping sauce.
2 servings = about 155 calories this can be a complete meal with crusty, hot bread and a salad!
