Artichoke Hearts in Tomato Rice
14-oz artichoke hearts, un-drained
16-oz stewed tomatoes, un-drained
1-1/2 cups uncooked instant rice (yes, I keep this on hand for a quick meal that I decide to make instead of the planned meal — sometimes ya just gotta taste for something!)
3 green onions, with tops, sliced
Mix artichoke hearts, tomatoes, rice, and green onions in 10-inch skillet. Heat to boiling, stirring frequently. Reduce heat. Cover and simmer for 10 minutes or until rice is tender. Yield: 8 servings
