1 cup fresh corn ( cut from the cob) or 1 cup of whole corn kernel corn from can (drained). 1 egg 1 tablespoon sugar 2 tablespoons oil 1/2 medium sized onion (chopped) 1 1/2 cups cornmeal 1/2 cup flour milk(enough to make it like pancake batter) salt and pepper
Fresh corn must be fried in a little bit of oil for about 6 minutes on medium heat. (Remember, canned corn must be drained). In a medium bowl, mix cornmeal, flour, eggs, milk, sugar, salt, pepper, corn and onion Pour mixture into a greased baking pan and bake at 350 degrees for 35 to 40 minutes or until top starts to turn brown slightly. Remove from oven and slice in squares and serve piping hot with butter. Make sure you servie it up wit some of that good ole chili!!
