      Saturday the 11th: Crock pot cube steak, mac n cheese, corn, roll

      Sunday the 12th: Easter – Chili burgers with hubby’s family.

      Monday the 13th: Spaghetti & a salad

      Tuesday the 14th: Crock Pot Roast, mac n cheese, green beans & roll

      Wednesday the 15th: Homemade pizza and salad

      Thursday the 16th: Meatloaf, homemade potatoes, green beans

      Friday the 17th: Grilled Chicken Breast, Italian Potatoes, mac n cheese

      Saturday the 18th: Enchiladas

      Italian Potatoes

      This is very simple. I take 4-6 Large potatoes or more depending on how much you want. Then I peel and cube them in little cubes. Put them in a baking dish. I take a bottle of Italian dressing and pour over them until all the potatoes are just covered. Then I baked them at 350 for a 45- a hr depending on your stove. (my stove takes 45 but my MIL’s takes about an hour.) Pretty simple and VERY yummy.

      For the Enchiladas: ( my brother doubles the recipe to make more but this is gogod for my family of 3 )

      1lbs Beef
      1 pk taco seasoning ( only use 1/2 a pk)
      1pk Cheddar cheese
      1 can refried beans
      1 can enchilada sauce
      Tortillas

      Brown meat and drain. Add 1/2 pk cheese, 1/2 taco seasoning, and beans. Stir well over heat until well melted. Take tortilla and fill with mixture. Roll up and spoon enchilada sauce on top then top with remaining cheese. Bake in over just long enough for cheese to melt.
      These are very good. Sometimes I throw in a salad. My husband tops his with sour cream.
