Apricot-Balsamic Pork Chops
4 boneless center cut pork chops
1/2 tsp garlic powder
1/2 tsp freshly cracked black pepper
1 tbs avocado oil
1 clove garlic, smashed
1 sprig thyme
1/4 cup apricot preserves
3 tbs balsamic vinegar
Heat oven to 425°. Place a cast iron skillet in the oven to preheat.
Rub pork chops with garlic powder and pepper on both sides. Once oven is heated, remove skillet and place on the stovetop over high heat. Add oil and swirl to coat the pan.
Sear pork chops for 2-3 min per side. Place in the oven to finish cooking, 5-10 min or until pork reaches an internal temperature of 145°. Remove pork chops, place on a plate and cover.
Place skillet over medium-low heat on the stove. Add garlic, thyme, apricot preserves, and balsamic. Whisk to combine and cook until thickened, about 5 min. Discard garlic and thyme.
Serve pork chops with a drizzle of apricot balsamic sauce. Serves 4
