      9 cups baking apples, peeled, cored and sliced
      1 1/2 Tbsp. lemon juice
      5 cups water
      2 1/4 cup sugar
      1/2 cup cornstarch
      1/2 tsp. salt
      1 tsp.

      ground cinnamon
      1/8 tsp. nutmeg

      Toss apples with lemon juice and set aside. Combine the rest of the ingredients in Dutch oven and bring to a boil for 2 minutes, stirring constantly. Add apples and return to boil.

      Reduce heat, cover and simmer until apples are tender (6-10 minutes). Cool for 30 minutes. Then ladle into freezer containers or bake immediately.

      Makes two 9-inch pies
