Here’s my favorite fall recipe that uses Apple cider, a chunk of pork and some fall vegetables.
4 sweet potatoes, peeled and cut in 1/2 inch slices 6 ounces dried fruit mix package 1 medium onion, sliced thin 1 bay leaf 3/4 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon dried rosemary, crush 1 1/2 lean boneless pork, 1-inch cubes 1/2 cup all-purpose flour 2 TBS vegetable oil 1 cup apple cider
Heat the vegetable oil in a pan, roll the pork in flour and season with salt and pepper, then sear it, browning it on all sides. If you don’t do this, it can dry the pork out in the slow cooker. Then dump it into the slow cooker and add all the remaining ingredients.
Cook on low all day, eat at dinnertime!
Apple Juice works if you don’t have cider but it’s not as flavorful.
