Apple Baked Pancake:-P
1 tbs butter
3 tbs sugar
3/4 tsp ground cinnamon
1 red apple, cored and sliced
1/4 cup flour
1 tbs sugar
5 eggs
1/4 tsp salt
1/4 cup water
1/2 cup lowfat milk
Preheat oven to 375°F. Melt the butter in an 8 in. baking pan, over medium heat, melt the butter. Stir in sugar and cinnamon. Sauté the apple slices in the sugar mixture, turning occasionally, until crispy-tender, about 3-4 minutes. Arrange slices neatly on bottom of pan. Mix together the flour, sugar, eggs, and salt. Combine the water and milk and beat into the flour mixture until smooth. Pour over the hot apple slices and bake at 375°F for about 15 minutes, or until golden brown and the sides become puffy. Serve immediately (the puff will fall, so serve the pancake the moment it comes out of the oven). 3 servings = about 245 calories - February 8, 2009 at 1:10 pm #414255

wow! this was in the Betty Crocker cookbook?! I had no idea! I’ve been making this since I was a little girl and I’ve never owned a Betty Crocker cookbook. Makes me wonder if my mother had one… and yes, it’s the perfect recipe to introduce to a little girl (I speak from experience! LOL!)
