      Yes, many cooks do this, including myself. Leftover onion, celery,

      carrot, leeks, mushroom stems, etc. end up in a gallon ziplock in the

      freezer. It doesn’t even matter if there are a few bits of dirt or

      sand since the stock will get strained through cloth/china cap at the

      end.

      I will either make a vegetable stock or — more frequently — make a

      chicken stock with these frozen veggies. If you’re making a darker

      stock, the occasional tomato is okay.

      Most experienced cooks will use the freezer quite well for maximum

      efficiency of leftovers (both raw ingredients as well as cooked items)
