Angel Hair Pasta
Next time you prepare angel hair pasta, make the whole box and save the extra for the next recipe.Angel Hair Pasta with Lemon and Pine Nuts
2 tbsp olive oil
2 tsp garlic cloves, crushed
2 tbs pine nuts, toasted (don’t have any? try slivered or sliced almonds)
2 tbs lemon juice
1-1/2 tsp lemon zest
1/4 cup parsley
1/4 lb angle hair pasta, heated in the microwave
Heat oil in a heavy nonstick skillet over medium high heat. Sauté garlic 1-2 minutes, stirring constantly until softened. Transfer to a bowl. Add pine nuts to bowl, crushing them lightly with the back of a fork. Add next 3 ingredients and salt and pepper to taste. Toss pasta with nut mixture and serve. 2 servings = about 250 calories.
