Participantgo ahead and buy that Angel cake that’s on sale! slice and freeze the slices in baggies then, when you’re ready for dessert, take out two slices and make the following…
Angel Cake with Mango and Creme Sauce
1 cup lowfat small curd cottage cheese
2 tsp sugar
1/8 tsp vanilla extract
2 slices angel food cake
1 cup mango slices, drained
Combine cottage cheese, sugar and vanilla in a food processor or blender. (It will be necessary to work in smaller batches if using a blender.) Process 1-2 minutes or until very smooth.Place cake on individual serving plates. Add mango slices to each and serve with a dollop of creme sauce.
2 servings = about 220 calories

Thanks for the recipe! What a nice treat to make for guests this summer (that is if I don’t eat it before they come LOL)

Participantlol! the whole point of slicing and freezing is so you won’t eat it all! lol!
but it is a special treat for guests, expected or not! and it’s great for cook outs on the deck…just increase the fruit and sauce for the number of guests;-)
