Easy Amazing Cinnamon Roll Bread!!!
No yeast in this recipe, so prep time is quick. You don’t even need a mixer! It makes its own unique swirl as it bakes. This would make a wonderful Coffee Cake as well as an incredible French Toast!!
Amazing Cinnamon Roll Bread
A note about the ingredients, you can use plain greek yogurt OR sour cream, depending on which one you have on hand. If you don’t have either you can clabber the milk by putting 1 tsp of lemon juice in a 1/3 cup measure and then adding milk to the top to finish filling. Let it rest 10 minutes before using.
This is adapted from a recipe I found online that looked pretty was but a bit bland on it’s own. I added some nutmeg and cinnamon to the quickbread and it really brought out the full flavor.Quickbread:
2 cups all-purpose flour
3 teaspoons baking powder
1/8 tsp nutmeg
1/2 tsp salt
1/2 cup sugar
1 egg
1 cup half & half (or milk)
2 tsp vanilla extract
1/3 cup plain greek yogurtSwirl:
1/3 cup sugar
2 teaspoons cinnamon
2 tablespoons butter, super softGlaze:
1/2 cup powdered sugar
1/4 tsp cinnamon (optional, but recommended!)
2 – 3 teaspoons cream or milk- Preheat oven to 350 F. Butter or spray a loaf pan. (see notes about loaf pan size below!)
- In a small bowl, whisk together the flour, baking powder, salt, nutmeg, and sugar. Set aside.
- In a large bowl, combine the egg, half & half, vanilla, and greek yogurt.
- Add the flour mixture to the egg mixture, stir just until combined. Pour into the prepared loaf pan.
- In a small bowl, stir the cinnamon swirl ingredients together. Drop by teaspoonfuls onto the top of the bread; then drag a butter knife through the batter to swirl (Don’t overmix it).
- Bake for 45-50 minutes or until the center is done. Use a toothpick to test the middle, if needed
- Remove from the oven and cool for 15 minutes in the pan on a wire rack.
- Remove bread from the pan and cool completely on the rack.
Prepare the Glaze:
Whisk the powdered sugar & cinnamon together, then add a couple of teaspoons of milk in a small bowl until smooth, adding a dab of milk at a time until you reach a decent drizzling consistency. Once the bread is completely cool, drizzle liberally with the glaze.Omgoodness!!!

Loaf Size- I used a Wilson wide 9.25″x5.25″x2.75″ wide loaf pan, that’s why my loaf is short & squatty.
Tall: If you want your loaf to be tall, use a 8.5″x4.5″x2.5″ OR
Gift Sized: If you want to make Gift Loaves, use 3 Mini Loaf Pans.Attachments:

Actually, this photo and recipe belongs to ME!! C. Lorentz via “The Bread Basket” had NOTHING to do with it other than use someone else’s property as if it were their own, which is in violation of any copyright law. MY name can be read clearly in the center of the photo! I’m flattered that someone would like it enough to steal but not so much whenever proper credit isn’t given to the owner. Sad, really..

Um, that recipe and photo are posted EVERYWHERE. How was she supposed to know which one was the original?? Btw, your name is NOT Clear. It’s nearly illegible for those of us using a smartphone. I made this yesterday to add photos to Pippi’s post but I’ve got to add a few notes about the recipe because we found it to be a touch bland.
In the cake mix part, add 1/4 tsp of nutmeg. It really adds a boost of flavor.
Also, increase the cinnamon swirl part:1/2 cup sugar
2 1/2 teaspoons cinnamon
3 tablespoons butter, nearly meltedPour half of the batter into the loaf pan, add drizzles of cinnamon swirl, add remaining batter to the loaf pan, add remaining cinnamon swirl. THEN drag the knife through it a couple of times to create the swirl. This will give you an EVEN swirl throughout the bread and it will have so much more flavor.
Also, if you opt to use sour cream instead of greek yogurt, be sure to add 1 tsp of lemon juice to the sour cream. It adds depth that is otherwise lacking. - December 23, 2020 at 11:25 am #595565
