Almost Fat-Free Banana Bread
1 1/2 cups whole wheat flour
3/4 cup splenda
1 tbs baking powder
3/4 tsp salt
3 bananas
1/2 cup skim milk
2 eggs
1 egg white
1 tsp vanilla
Preheat oven to 400 degrees.
Sift together the first four ingredients in a medium bowl.
Mash the 3 very ripe bananas.
Add milk eggs, egg white and vanilla to bananas.
Mix in dry ingredients with banana mixture until all relatively smooth.
Grease a standard loaf pan or use non stick spray. Pour batter into loaf pan.
Bake for roughly 25-30 minutes until tester in the middle of the loaf is clean. Let cool completely before cutting.

This is great. I couldnt find my banana bread recipe so i tried this one. It will be the recipe i use for now on!
My guess is that the people who have chewy or heavy bread are stirring too much, and the people with not enough flavor are using bananas that are not ripe enough. The nastier they look the better they are for bread! - August 1, 2014 at 4:09 pm #457103

Glad you like it! I agree, the ‘darker’ the banana, the better it is for breads, muffins, etc.
