12 Oreo cookies
2-8oz packages of softened cream cheese
1/2 cup white sugar
1 tsp vanilla
1/2 cup choc chips –
2 tsp shortening
Split cookies. Keeping filling on one side.
Line muffin pans with FOIL baking cups.
Place filling covered cookies in baking cup, filling side up. Set aside. In medium bowl, beat cream cheese, sugar, vanilla and eggs until smooth. Spoon cream cheese mixture into baking cups.
Crush remaining cookies and sprinkle over cream cheese mixture.
Bake uncovered at 325°F for 25 minutes or until set. Cool.
In small saucepan, melt chocolate chips with shortening over
low heat, stirring frequently. Drizzle over baked cheesecake.
Cover and chill. Makes 12 single serving cheesecakes

they’re great for parties! and anyone TRYING to watch their calories around the holidays won’t feel guilty by having one, little cheesecake! LOL!

That sounds like a possible addition to the cookie baskets that I am trying to make. Just wondering, do you think that the crust could be made with vanilla wafers or graham crackers? I have a FIL who can’t have chocolate.

vanilla wafers should be okay or use the vanilla-creme sandwich cookies if FIL can’t have chocolate. I’ve never used vanilla wafers for this but I’ve used all flavors of the sandwich cookies — even peanut butter, which is my favorite! these I definitely keep to myself! LOL!
