I like to make a large pot of Chili Beans on Sunday’s. We eat on it for 5 days.
1 bag dried pinto beans 1 bag dried kidney beans 2lbs. Ground Beef/Turkey or chicken 1 large onion 2 large cans pureed tomatoes 1 can green chilis Chili Seasoning to taste Salt/Pepper 8 cups water
Soak Beans in water Saturday evening after dinner. (they will be good and soft by Sunday lunchtime). Brown Meat, add onion.
Drain Grease. Mix in Soup Pot all ingredients. Allow to simmer for several hours on med.
Sunday – Chili Beans with Tortilla Chips or Crackers Monday – Chili Beans with Corn Bread Tuesday – Baked Potatoes covered with Chili & Cheese Wednesday – Nachos using Leftover Chili Thursday – Rice in a bowl covered in Chili & Cheese
