I love lemon bars- actually I love anything lemon at all. It’s crisp tasting and fresh and citrus”y” and just plain yummy. So I really loved the idea of a quick recipe with only 3 ingredients.
You will need:
1 box yellow cake mix
1 stick (1/2 cup) butter (softened to room temperature)
1 can lemon pie filling or 1 recipe of Lemon Curd
Mix the cake mix and butter together until completely incorporated and crumbly. Press all but about 1/2 a cup into the bottom of a 9×13 baking dish (use a smaller dish if you prefer thicker bars). Spoon the lemon pie filling over the top, then spread it out evenly. Sprinkle the remaining 1/2 cup or so of crumbly mixture over the top and bake at 350F for about 25 minutes.
Cool slightly, cut into bars, enjoy. Refrigerate the leftovers (assuming there are leftovers).
