      Stuff them and bake them: Using a paring knife to cut out the core from

      whole apples to within a half an inch of the bottom (try granny smith or

      braeburn) Stand apples up in a baking dish and stuff with dried

      cranberries and chopped pecans. Drizzle with honey and bake at 375 for

      30 mins or until soft. Serve warm with a scoop of vanilla ice cream


      Add a sweet touch to chicken: Slice 2 apples into wedges (any kind will

      do) and add to a pan of roasting chicken about 30 mins before the end of

      the cooking time. Serve with sweet potatoes for a perfect fall feast.


      Bake ultra moist muffins: Cook peeled, chopped sweet apples (try gala)

      in a few tablespoons of water until soft and sauce like. Add 2 or 3 Tbsp

      apple pulp to your favorite muffin batter and bake as you would normally


      Saute a sizzling side dish: Core your favorite variety of apple. Slice

      into rings or wedges. Melt a tablespoon of butter in a skillet over

      medium heat. Add apples and 1 or 2 thinly sliced leeks. Saute until soft

      and golden. Sprinkle with black pepper and serve topped with crumbled

      cooked bacon.


      Jazz up grilled cheese: Mix a grated tart apple such as granny smith

      with shredded cheddar cheese and a bit of dijon mustard. Spread between

      2 sliced of multigrain bread and cook in a nonstick skillet (or a

      sandwich press if you have one) until the bread is toasted and the

      cheese is nice and gooey


      Lunch on a crisp salad: Slice up a sweet apple (empire or pink lady

      would be tasty) into small chunks and sprinkle with lemon juice. Toss

      with baby spinach or other greens, crumbled feta cheese and walnuts. To

      make it a meatier meal top with leftover chicken


      Give meatballs a makeover: Saute a peeled chopped apple any kind in a

      few tablespoons of water until soft and pulpy. Combine with ground

      turkey, sauteed onions, pinch of dried basil, dash of worcestershire

      sauce, salt and pepper to taste. Shape into meatballs and saute in

      skillet with a bit of olive oil until cooked through


      Make personal size pies: Chop up a granny smith, golden delicious or any

      other good pie apple. Arrange in the center of several squares of thawed

      frozen puff pastry dough. Top with chopped raisins and sprinkle with

      cinnamon and brown sugar. Brush pastry edges with melted butter and fold

      over filling into a triangle. Brush with more melted butter and bake 350

      for about 20 mins or until golden and puffy


      Whip up a quick applesauce: Pierce a few apples with a knife several

      times and insert whole cloves into each slit. Place on a plate and

      microwave about 3 to 4 mins or until apples are soft. Let cool slightly.

      Then cut in half and scoop out the cooked flesh into a bowl. Season with

      cinnamon and sprinkle with a bit of brown sugar to serve. (McIntosh and

      Fuji apples make tasty sauces)


      Spoon into oatmeal: Grate a tart cooking apple (peeled or unpeeled) add

      to dry oatmeal and prepare as usual. Topping with drizzle of honey and a

      few dried cranberries at the end.

      Thanks for the great Ideas, Another one of my favorite things to do is to make huge batches of Apple Pie filling, vacuum seal and then Freeze them. You can make pie crusts ahead of time (Like the ones the have in the store in the refrigerated section!), so all you have is baking time. It makes your whole house smell like you’ve baked all day when in reality all you did was get home from work, dump a bag of yummy filling into a crust, shove it in the oven & sink into a bubble bath.:tongue:

      I have never tried adding apples to meatballs but will have to give it a try.
