Spinach and Penne
1 lb fresh spinach
6 oz penne pasta
1/2 cup roasted red peppers, cut into strips
1/2 cup feta cheese, crumbled
1 tbs olive oil
1 tsp balsamic vinegar
Boil the pasta as directed on the package, about 11 min.
When the pasta is done, drain and place in the serving bowl. Toss with butter or olive oil if desired.
While the pasta is cooking, wash the spinach removing any long stems.
Spin in a salad spinner to remove the excess water or pat them dry.
Heat a tbs of olive oil in a frying pan.
Toss the spinach into the frying pan and swiftly stir it in the oil just until the greens are wilted about 30 to 60 sec. Add a tsp of balsamic vinegar and stir, then remove from heat.
Add the spinach to the pasta.
Add the roasted peppers (jarred or freshly roasted).
Add the crumbled feta cheese.
Toss gently together and serve.
