      MrsPaws, how do you make your dirty rice? I have a recipe that I've made a couple times, but I would love to find an authentic Southern Dirty rice recipe that I can use when I want a "sure thing". You know what I mean? I love to try new recipes out- but if friends stop by I don't want to be "testing" out a new dish. Thanks!!

      Just posted this in the General Recipes section also, but not sure of how authentic it actually is.
      This is one of those "go to" recipes for me and a great way to use up those odds and ends sitting around in the fridge. It's not let me down yet.
      Hope your family enjoys it also!

      Dirty Rice

      1 tbsp olive oil
      1/2 to 1 pound ground meat (what's on hand)
      1 large onion-diced
      1 bell pepper-diced (any color-what's on hand)
      2 stalks of celery-diced
      1/2 cup grated carrots-*optional*
      3 cloves of garlic-minced or grated
      1 1/2 cup long grain rice-NOT minute type rice (can use Basmati, Jasmine, white, brown, etc...)
      1 tbsp beef base-no MSG added (can use bouillon-no MSG)
      1 tsp paprika
      1/4 tsp red pepper flakes-to taste
      3 cups beef broth (can use water if broth isn't on hand)
      1 tsp dry dill weed
      1 tsp dry minced parsley
      1-1/2 tablespoon soy sauce
      black pepper-to taste

      1. In a large heavy bottomed skillet or dutch oven, add 1 1/2 tsp oil. Brown gound meat. Remove from skillet and rinse to remove fat. Drain fat.
      2. Add remaining olive oil and veggies. Saute until almost softened.
      3. Add rice with veggies and saute for 3-4 minutes.
      4. Add all other ingredients. Bring to a boil then reduce the heat to low. Cover and simmer for 25-35 minutes or until rice is tender and liquid is absorbed.
      5. Fluff and serve hot.
