    • Stained Glass Valentine Cookies

      Stained Glass Valentine Cookies Show your valentine how much you care with these delicious stained glass valentine cookies, yes, they're completely edible and will literally melt in your mouth!

      You'll Need:
      * 1 cup sugar
      * 2 sticks butter
      * 2 eggs
      * 1 teaspoon pure vanilla extract
      * 3 cups all-purpose flour
      * Assorted brightly colored, hard candies such as lifesavers or jolly ranchers
      * 2 Heart shaped cookie cutters (1 slightly smaller!)

      Preheat oven to 350F

      In a medium size bowl (or mixer) cream the sugar and butter together until smooth. Add vanilla extract and egg, mixing until smooth, add in flour, a little at a time, until fully incorporated. Shape into a ball, place in a bowl, cover and refrigerate for 1 hour.

      Remove from fridge and divide in half- Roll out the dough on a floured surface and cut into heart shapes using the larger size heart. It helps to dip the cutter in flour first. Cut out the centers of the heart shapes with the smaller cookie cutter.

      Unwrap the hard candies and crush them. If you have young helpers you can place the candies in ziploc bags and let the kids pound them with a meat mallet (on a cutting board, or it will damage your countertops!).

      Place the heart cookies on cookie sheets that have been lined with parchment paper, fill each center with crushed candies.

      Bake 10-12 minutes or until the cookies are golden brown and the centers are fully melted and smooth. Cool completely before removing from cookie sheet.

      We don't do anything special as a couple for Valentines. I do still get the boys a small heart box of chocolates, think they would really miss it if I didn't, lol. I prefer to do the little things...

      My Husband and I have not celebrated Valentines Day since our son passed away 7 and 1/2 years ago. I do celebrate with my 2 grandchildren though as they are the best valentines I could ever have...
