    Default O'Larry's Skillet Potatoes

    2 pounds potatoes, cut into 1/2-inch cubes
    1 medium onion, finely chopped
    1 medium sweet red pepper, chopped
    2 garlic cloves, minced
    1 teaspoon Caribbean jerk seasoning
    1 teaspoon salt
    1/4 cup olive oil
    Directions:
    Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 5-10 minutes or until almost tender. Drain.
    In a large skillet, saute the onion, red pepper, garlic, jerk seasoning, salt and potatoes in oil until potatoes are golden brown and vegetables are tender. Yield: 10 servings.
