1 1/2 lbs. beef stew meat
3 large potatoes, cut into chunks
3 large stalks celery, cut into chunks
3 to 4 carrots, pared and sliced
2 1/2 cans tomatoes
1 slice bread, cubed
3 tbsp. Minute tapioca
Salt and pepper to taste
Bay leaf (optional)
1 med. onion
Add meat, vegetables, bread and tapioca to crock pot, stirring to combine. Pour tomatoes on top of vegetables, bu do not stir. Turn crock pot on high for first hour, then on low for 6-7 hours. Serve with corn bread.
