Quickie Breakfast- Omelet in a Mug
Omelet in a Mug
Serve: 1 serving
Prep. time: 5-10 minutes
2 egg, beaten
2-3 TBSP shredded cheddar cheese
1 TBSP diced cooked ham
1 TBSP diced green pepper
salt and pepper to taste
Combine all ingredients in a small bowl; mix well. Spray a microwave-saft mug with cooking spray. Pour in egg mixture. Microwave, uncovered, on HIGH for 1 minute; stir. Cook 1 to 1-1/2 minutes longer or until eggs are completely set.
Sounds kind of strange, but we made a bunch this morning and they were really Great! Leave some veggies cut up in baggies in the fridge and you can have really fast meals.
