Tuna Melts
2-6 oz cans water-packed tuna
4 tbs low-fat or fat-free mayonnaise
4 tbs chopped celery
8 slices whole wheat bread (can substitute with your favorite)
1 cup low-fat or fat-free shredded cheddar cheese
Combine tuna, mayonnaise, and celery in a bowl, then set aside. Place slices of bread on a cookie sheet, and broil in oven until just golden brown, usually 2 to 3 minutes. Remove from oven. Turn bread slices over, and top each slice with 1/8 of the tuna mixture. Sprinkle shredded cheddar on each slice of bread and tuna. Broil in oven for 2 to 4 minutes, or until the cheese melts. Serves 4 .
