    Looks great! I just got done making 12 jars of Salsa tonight - my recipe is pretty close to yours.

    I wonder if canned tomatoes could be substituted for fresh?

    Yes when I first started making salsa I used canned whole tomatoes and cut them into chunks Works fine.

    I've been looking for a great salsa recipe forever! This looks like exactly what I've been after. I'm new to canning, so this is doing double duty for me. I love the idea of adding habaneros too, although I'd likely be the only one who could eat it.

    I am going to try this with some Serrano chilies (which I obtained dirt cheap recently), and some green chilies along with the jalapenos. Mmm, I like hot salsa so hopefully this will kick things up to my liking. I'm wondering if anyone has tried any other sort of peppers such as Anaheim, habanero, or Thai chili peppers?
