    Wink Maine Potato Candy

    want to do something different with leftover mashed potatoes? got this from a friend that lives in Maine...where else! LOL! she said I could share sooo...
    Maine Potato Candy
    4 cups confectioners' sugar
    4 cups flaked coconut
    3/4 cup cold, plain potatoes, mashed (do not use leftover mashed potatoes made with milk or butter so you may want to reserve this amount before you add all of the lovely extras;->)
    1 1/2 tsp vanilla extract
    1/2 tsp salt
    1 lb dark candy coating

    1 cup semisweet chocolate chips
    In a large bowl, combine the sugar, coconut, mashed potatoes, vanilla, and salt. Line a 9-inch square pan with foil. Butter the foil. Spread coconut mixture into pan. Cover and chill overnight. Cut into 2 x 1-inch rectangles. Cover and freeze. In a microwave or double boiler, melt candy coating and chocolate chips. Dip bars in melted coating and chocolate chips. Place on waxed paper to harden. Store candy in an airtight container. Makes 2 lb.

    In maine, we actually call these Needhams. (Pronounced Need-em's). And they are so yummy!

    So is my recipe accurate? Since I haven't had any in Maine...I'd kinda like to know if i'm in the ball park. If it isn't close enough, let me know so I can talk with my friend to strategize how to get on the mark so-to-speak...giggle...

    Well, actually my recipe uses HOT mashed potatoes and you melt butter into them before adding the confectioners sugar. The coating is always nestles choc chips (1 bag) AND 2 squares Bakers brand unsweetened chocolate to offset the sweetness of the dip. It CANT be humid out when you make them or the chocolate won't set properly, they're much easier to make on a cold day as the centers need to be firm. I'd have to dig out my recipe to remember the exact amounts, but I think it's a full stick of butter. I've never tried making them this time of year, they're usually a christmas/yule treat <g>

    My mom used to make this but it never was this fancy. She peeled and boiled one large potato and then mashed it. She added 1 box confectioner's sugar and mixed it. Then she rolled it out and spread peanut butter over it and then rolled it. It went into the fridge and when it was cold she sliced it. We called it potato fudge.

    Since I don't have a firm confirmation on what is a good recipe...I'll go 'play' in my kitchen and get back with ya'll...giggle...
