Chicken A La King
2 cups cooked chicken
cup chopped onion
1 green pepper, chopped
1 small can of mushrooms or 4 to 6 oz fresh chopped mushrooms
2 tbs oil or butter
tsp pepper
6 tbs flour or less flour
1 cup milk
cup cream

1 cups chicken stock, or water with bouillon
4-oz jar chopped pimentos
salt if not using bouillon
Heat the oil or butter and saute' the onion for 2-3 minutes. Add the green pepper and mushrooms, and cook until softening. Add pepper. Add the flour. Cook for 2 minutes before adding liquids. Add liquids. Add salt if needed. Bring to a simmer and cook for 3-4 minutes. Add chicken and pimento. Heat through. Serve over biscuits, toast, or if trying to lower carbs...over mashed cauliflower.
