3 CUPS FINELY CHOPPED ONION
1/2 CUP FINELY CHOPPED GREEN BELL PEPPER
6 CLOVES GARLIC, MINCED
2 1/2 TSP CAYENNE PEPPER OR TO TASTE
1 TBS PREPARED MUSTARD
1 TBS HONEY
6-OZ CAN TOMATO PASTE
1/3 CUP LOW-SUGAR KETCHUP
1/2 LEMON, SLICED AND SEEDS REMOVED
1 TBS WHITE WINE VINEGAR

SALT OR HERBAL SALT TO TASTE
BLACK PEPPER TO TASTE
1. IN A LARGE SAUCEPAN OVER MEDIUM HEAT, HEAT OIL AND SHERRY. ADD CELERY, ONION, GREEN PAPPER AND GARLIC, AND SAUTE FOR 40 MIN, STIRRING FREQUENTLY.
2. ADD REMAINING INGREDIENTS EXCEPT SALT AND PEPPER AND SIMMER FOR 2 HRS.
3. LET COOL, THEN PUREE. SEASON TO TASTE WITH SALT AND PEPPER. STORE IN SEALED CONTAINER IN REFRIGERATOR FOR UP TO TWO MONTHS. MAKES ABOUT 5 CUPS = 73 CALORIES PER 1/4 CUP SERVING.
