Grilled Turkey Breast and Vegetables
Season turkey breast and grill (or bake) using your favorite recipe. Berfore grilling turkey, grill halved yellow squash and zucchini and sliced eggplant and onion brushed with bottled Italian dressing. If you bake your turkey breast, place the vegetables in the pan for the last 20 minutes of baking so that they're crisp-tender. Reserve leftover vegetables and turkey for use later in the week.
Linquine with Grilled Vegetables
Toss hot pasta with 1/3 cup pasta cooking water and cut-up vegetables from earlier in the week. Top with ricotta cheese, fresh chopped tomato and grated Parmesan cheese.
Cut turkey from earlier in the week in strips. Saute sliced peppers and onions with oregano and ground cumin until crisp-tender. Add a splash of red-wine vinegar. Roll up in warmed flour tortillas with the turkey, sour cream and chopped cilantro.
