ISO peanut chicken
i was wondering if anyone has a good authentic receipe or peanut chicken? copy cat would be nice but i dont know a place that has a good one. TIA!

Not authentic by any means. But it is a recipe for peanut chicken.
1 pound boneless skinless Chicken Breasts, cut into 1” chunks
3 Tablespoons fresh Garlic, minced
1 1/2 Tablespoons fresh Ginger, minced
3/4 cup Green Onions, chopped
1 Red Bell Pepper, sliced
1/3 cup Dry Roasted Peanuts
1 (8 ounce) can Water Chestnuts, drained, rinsed and dried (optional)
3 tablespoons Soy Sauce
2 Tablespoons creamy Peanut Butter
2 teaspoons Rice or White Wine Vinegar
1 teaspoon Sesame Oil
1 teaspoon Brown Sugar or Honey
1/4 teaspoon Cayenne Pepper or Sri Racha Style Hot Chile Sauce (or to taste)
1/4 cup water
In a bowl mix soy sauce and peanut butter. Add vinegar, sesame oil, brown sugar or honey and cayenne pepper or chile sauce. Mix well and set aside.
In a large skillet heat oil and add the garlic, ginger and chicken. Cook until chicken is no longer pink inside and the juices run clear.(5 minutes or so) Remove from pan and transfer to a serving dish. Add a tiny bit more oil to the pan and stir fry red bell peppers and green onions for about 2 minutes or until they have reached desired tenderness. Pour over chicken. Add water chestnuts (if using) to the dish and sprinkle roasted peanuts around and on top of the chicken. Now, over medium heat add the peanut sauce mixture to the pan. Stir constantly and when sauce mixture starts to bubble add water mixing well to thin it out just a little bit. Add the sauce to the serving dish and mix well. Serve over rice, or broccoli and rice mixture. Enjoy!
