    Default Cheap Easter Dinner for 10 or More

    You might want to check the ham prices in your area. Here you can get boneless hams for 77-97 cents per lb. I buy 1/2 lb for each adult and 1/4 for each child. It may figure out to less per person than ingredients for other things. Click image for larger version.

    Since you are cooking for 20 these recipes can also be made ahead of time.

    Crockpot Ham
    I buy a fully cooked boneslss ham and wrap it in foil and stick it in the crockpot over night or for 4-5 hrs on low. You can add a glaze to the ham if you like.

    Dinner Rolls
    If you are interested im making rolls this is a fantastic recipe:

    2 cups milk-scalded in microwave-4 min.
    1/2 cup margarine melted in the milk
    1/2 cup honey
    2 eggs
    1 tsp. salt
    2 pkg yeast.
    4-7 cups flour (can be 1/2 whole wheat if you like)

    Mix first 6 ingredients.

    Stir in in enough flour to make dough easy to handle (can be slightly sticky) Knead a couple of times on floured surface. Place in greased bowl. cover and let rise until double (1-l/2-2 hrs. Punch down and shape into rolls. Place in greased baking pan. Let rise 30 min or until double. Bake 15-20 min at 350 degrees

    Veggie Macaroni Salad
    Makes 20 servings
    They always request that I bring this salad to family dinners and celebrations. Its great and easy to make.

    2 lb. macaroni, cooked and cooled
    2 green pepper, chopped
    2 onions chopped
    8 carrots shredded

    1 can Eagle Brand Milk
    3/4 cup vinegar
    1/2 cup sugar
    2 cups miracle whip
    1 tsp salt or salt to taste
    1/4 tsp pepper

    Add veggies to cooked macaroni and mix well. Combine dressing and pour over salad. Mix Well and chill at least 4 hrs (I like to chill it overnight)

    Ginger Lime Pineapple Salad
    Serves 10
    This salad is so refreshing and great with ham!

    1 (15 l/4 oz.) can chunk pineapple in juice
    1 (6 oz.) box lime Jello
    1-l/2 cups boiling water
    1 cup ginger ale-cold
    1/4 tsp powdered ginger

    Drain pineapple reserving juice. Dissolve Jello in boiling water. Add reserved juice, ginger ale and ginger. Chill until thickened. Fold in pineapple chunks and chill until firm about 4 hrs.

    The stores usually have angel food cakes on special at Easter too. I would buy a couple of those and serve with fresh sliced strawberries.

    That sounds like a fantastic menu plan for easter, thank you for sharing! I try to vary the menu each holiday, but it seems like we always revert back to our own family favorites. The yeast rolls sound delicious too!

    Ours will Probably Be:

    12-15 lb Ham (Cheap & on Sale for around .68 pound)
    Crushed Pineapple (make a sauce with brown sugar & butter, dash of cloves to serve over ham)
    Honey Glazed Carrots with dash of cinnamon
    Macaroni Salad
    Au gratin or Scalloped Potatoes (dish costs about $3 to make enough for 12 people)
    yeast rolls (cost about $1.25 to make a huge batch)

    Pina Colada Salad

    I never thought of doing ham in the crockpot like that and I can't wait to try it. I also love the sound of the Ginger Lime Pineapple Salad. Yum!
