Chicken Or Tofu Salad


* 1/4 cup almonds, slivered
* 3 Tbsp. sesame seeds (grind up 1 1/2 Tbsp. if possible, it brings out more flavor)
* 1 package Top Ramen noodles
* 2 Tbsp. soy sauce (lite-less salt)
* 1/3 to 1/2 cup Wine
* 1/4 tsp. Garlic powder
* 1/4 tsp. Onion powder
* 2 Tbsp. Splenda
* 3 Tbsp. White vinegar
* 1/4 cup oil (I used 1/8 cup sesame and 1/8 cup olive oil)
* 4 scallions thinly sliced
* 1 red bell pepper (Optional I didn't use it)
* Cilantro, chopped (Optional I used dried cilantro 1/4 tsp.)
* 1/2 head cabbage (I used about 3 lbs. of Chinese cabbage chopped fine)
* 2 cup chicken breast, cooked and diced small (I used 2 cups tofu)


Toast almonds with sesame seeds and cool. Add cabbage. Break noodles into small pieces, add to almonds, sesame seeds and cabbage and set aside. Blend together with a wisk: soy sauce, wine, garlic powder, onion powder, splenda, vinegar, oil, scallions, pepper, cilantro. Add chicken to "wet" mixture. Let marinate if you have a mind to (it does enhance the flavor, especially of the Tofu) Pour over cabbage. I let it sit a few hours (refrigerated) to blend the flavors! It was delicious.
