    Wink Pennette with Salad Vegetables

    Pennette with Salad Vegetables
    12 black olives
    1 1/4 lb tomatoes, chopped (can use can if you don't have a garden!)
    1/2 romaine lettuce, julienned and roughly chopped
    1/2 cup arugula, roughly chopped
    1 garlic clove, finely chopped
    1 red onion, finely chopped
    3 tbs basil
    pepper to taste
    1/2 cup olive oil
    1 lb pkg pennette
    salt to taste
    Slice the olives. In a serving bowl, thoroughly combine the olives and all the other ingredients for the sauce. Cook the pasta according to directions. Drain well and toss with the sauce in the bowl. Check for salt, and serve immediately. 4 servings = about 765 calories.
