    Thumbs up First Full Week of October

    not really cooking that much this week...friends and family are taking pity on me cause I'm so broke! LOL!
    dinner with friends so I'm taking a chocolate-mint cheesecake for dessert

    sister's birthday is Thursday, but her DH is off on Tuesday so he planned a cook-out and I'm taking her favorite cake -- lemon-poppy seed chiffon cake

    and now that I have extra 'lemon' on hand, I'm making desserts this week that freeze nicely for future sweet tooths
    Beef and macaronei casserole, green peas, and lemon shortbread bars

    Pork and spaghetti casserole, mixed veggies, and lemon shortbread wedges

    Swiss chicken and noodles with broccoli and raspberry ribbon mousse bars


    Beans and rice, and white chocolate-lemon shortbread bars

    One of the leftover casseroles (hadn't decided which one yet...I portion them up to the freezer for future meals), corn, and make-ahead citrus souffles (these will also go for breakfasts)
