Linguine with Squid and Garlic
12 cup olive oil
7 garlic cloves, finely chopped
1 1/2 lb squid, cut into rings and tentacld sections
3/4 cup dry white wine
16-oz can tomates
1/4 cup parsley
pinch crushed red pepper flakes

alt and pepper to taste
1 lb pkg of linguine
Warm the oil and garlic together in a broad skillet over medium-low heat. Saute gently until the garlic is softened, but do not allow it to color, about 4-5 minutes. Add the squid and increase the heat to high. Saute for 5 minutes, stirring frequently. Pour in the wine and reduce the heat to medium. Allow the alcohol to evaporate, about 3 minutes. Stir in the tomato, parsley, and pepper flakes. Cook for 5 minutes, then season with 3/4 tsp of salt and pepper to taste. Meanwhile, prepare linguine according to directions. Drain the pasta, toss with the sauce, and serve. 4 servings = about 905 calories.
