Makes 4 servings (1 wedge each)

PAM® Original No-Stick Cooking Spray
2 frozen Banquet® Brown ?N Serve? Sausage Turkey links, chopped
1 jalapeno pepper, seeded, chopped
1 corn tortillas, cut into 1-inch pieces
1-1/2 cups Egg Beaters® Southwestern Style (1-1/2 cups = 12 oz)
1/2 cup shredded reduced fat Mexican cheese blend (1/2 cup = 2 oz)
1 medium tomato, seeded, chopped
Chopped fresh cilantro, optional

Preheat broiler. Spray 10-inch nonstick skillet with heat-proof handle with cooking spray. Heat over medium heat.
Add sausage, peppers and tortillas. Cook and stir 4 minutes, or until tortillas are lightly browned. Reduce heat to low. Pour Egg Beaters evenly into skillet. Cover; cook 9 minutes, or until bottom of frittata is set but top is still slightly moist. Remove lid from skillet.
Place skillet under broiler. Broil 2 minutes, or until top is set but not brown.
Remove frittata from broiler. Top with cheese, tomatoes and cilantro, if desired; let stand until cheese melts. Cut into 4 wedges.
