    Red Cabbage-Apple Slaw with Spiced Walnuts
    2 tbs packed brown sugar
    1 tsp chili powder
    1/8 tsp thyme
    3 1/2 tbs olive oil, divided
    1 cup coarsely chopped walnuts, toasted, warm*
    8 cups thinly sliced red cabbage
    2 Granny smith apples, unpeeled, julienned
    2 tbs balsamic vinegar
    2 tbs orange or apple juice
    3/4 tsp salt
    Combine brown sugar, chili powder and thyme in medium bowl. Stir in 1 1/2 tbs of the oil. Add walnuts while still warm. Toss well. Combine cabbage and apples in large bowl. Stir in vinegar, orange juice, remaining 2 tbs oil and salt. Add spiced walnuts. Toss. 12 servings = about 140 calories
    *To toast walnuts, place on baking sheet, bake at 375 for 4 to 6 minutes or until pale brown and fragrant.
    p.s. obviously I'm not making the whole batch! LOL! I'm spreading out the cabbage over the week in other recipes and of course I'll have some for lunches over the next week or so

    Thanks so much! My hubbie doesn't really like any kind of slaw, but I'm sorry! I'm just gonna have to make this one! It looks too good!
