4 8" flour tortillas
1 Green pepper; slice
1 Red onion; thin wedges
1 lg Clove garlic; slice
1/4 ts Ground cumin
3 tb Vegetable oil
1 lb Shrimp; peel, devein
1/2 ts Salt
1 c Shredded cheese

1 Red pepper
2 Annaheim chilies
2 Italian frying peppers
2 Zucchini
1 Jicama; cut matchsticks
4 Plum tomatoes; seed, cut

Sea scallops
Boneless chicken breast
-tenders
Flank steak; slice
Canadian bacon
Ham; cut strips
Turkey tenderloin; slice

Mozzarella
Monterey Jack with Peppers
Queso blanco

Colby

Heat oven to 350~. Wrap tortillas in foil; place in
oven. Meanwhile, in 12" skillet over med-high heat,
cook next 4 ingredients in hot oil 5 minutes, stirring
occasionally; remove. Add shrimp and salt to pan; cook
3 minutes, tossing, until shrimp turn pink and opaque.
Arrange shrimp, veggies and cheese on tortillas; fold
over. Bake 4-5 minutes or place on hot grill until
heated through. Cal 478; Fat 25 gr; 47% fat; Fiber 6
gr.

216 WAYS: Using above recipe, substitute an
ingredient from Column A for the green peppers, a
selection from Column B for the shrimp and a cheese
