don't be fooled by the name! this is really a very good and cheap meal I keep praising the benefits of using anchovies and being creative with them. one day, somebody will say, "hmmm...not what I expected!'
Spaghetti with Anchovies and Tuna
1/4 cup olive oil
3 tbs butter
2 garlic cloves, finely chopped
6 anchovy fillets
2 7-oz cans tuna, drained and finely chopped
1/4 dry white wine
pepper to taste

3 tbs parsely
salt to taste
1 lb pkg spaghetti (linguine works if on hand)
Warm the oil and butter in a large skillet over medium-low heat. Add the garlic and allow it to soften, about 3 minutes. do not let it brown! Add the anchovies and 1 tbs of their oil to the pan. Let the anchovies dissolve completely, 2-3 minutes. Add the tuna and stir, then pour in the wine. Allow it to evaporate, about 3 minutes, until a thick, fairly smooth sauce is formed. Season liberally with pepper and stir in the parsley. While the sauce is cooking, prepare the spaghetti according the directions. Scoopt the pasta with a pasta thingy right into the skillet with the tuna sauce. Toss all a bit and serve. 4 servings = about 760 calories.
