    Easy Leftover Beef Stew
    1 pkg frozen vegetable medley
    1 cup of red wine
    1 pkg onion soup
    1 onion
    3 cloves garlic, chopped
    Leftover roast beef, diced
    10-oz frozen carrots
    1 can of corn
    1-2 cans of diced tomatoes (optional)
    Brown garlic and onion in small amount of oil in a stew or soup pot. Add meat and brown (this is an important step as it gives the meat a good texture). Add everything to pot after onions have caramelized. Fill close to top with water so it can cook down. Bring to a boil and then reduce heat and simmer for several hours. Add water as needed. The final stew should be fairly thick. For thicker stew, when close to serving, take about a cup of the liquid and cool. Add cornstarch to produce a thick liquid and stir into the stew. Serve stew over egg noodles. 6-8 servings.
    note -- once you've browned the meat, you can dump everything into the crockpot, just barely cover with water, and cook on low 5-7 hours. you will have to thicken with cornstarch!
