Grilled Cuban Pork Chops
Prep Time: 20 min
Makes: 4 servings
2 tablespoons grated lime peel
1 tablespoon cumin seed
1 tablespoon cracked black pepper
1/2 teaspoon salt
2 tablespoons olive or vegetable oil
1 clove garlic, finely chopped
4 boneless pork loin or rib chops, about 1 inch thick (about 2 pounds)
Mango slices, if desired
1. Heat coals or gas grill for direct heat. Remove excess fat from pork. In small bowl, mix all Cuban Rub ingredients; rub evenly on both sides of pork.
2. Cover and grill pork 4 to 6 inches from medium heat 8 to 10 minutes, turning frequently, until pork is no longer pink and meat thermometer inserted in center reads 160°F. Garnish with mango slices.
No cumin seed? Use 1 teaspoon ground cumin.
Round out these flavor-packed pork chops with corn on the cob and cooked rice tossed with black beans.
The Cuban Rub is also delicious on chicken breasts.
