    Heart Sugar-Free, Fat-Free Red Velvety Cake

    Sugar-Free, Fat-Free Red Velvety Cake

    2 cups flour
    20 drops red food coloring
    3 Tablespoons baking cocoa
    1 Cup skim milk + 1 Tablespoon lemon juice
    ½ Cup unsweetened applesauce
    1 teaspoon vanilla
    1 ½ Cup Splenda (not splenda blend)
    1 teaspoon baking soda
    2 large eggs
    1 Tablespoon vinegar

    Heat oven to 350 F. Spray two 9” round or one 9” x 13” long baking pan with cooking spray. Sift the flour and cocoa. Set aside. Cream the applesauce, Splenda, eggs and food coloring together. Add vanilla to the skim milk and lemon juice. Add flour mixture to the milk mixture. Beat well by hand. Mix baking soda and vinegar and fold gently into the cake mixture. Pour into baking pan(s). Place in oven and bake for 30-35 minutes or until toothpick inserted in center comes out clean. Serves 10-12 people. Cake will be very moist
