      Peach Cobbler for Two

      1 1/2 teaspoon Cornstarch
      1 Tablespoon cold Water
      1 can (8 1/2 ounces) sliced Peaches, undrained
      1/2 cup Baking Mix
      2 teaspoons Sugar
      1 Tablespoon Milk
      1 Tablespoon Vegetable Oil

      In a small saucepan, combine the cornstarch and water, stir until smooth and stir in peaches. Bring to a boil and cook until thickened (about one minute) stirring constantly. Pour into 2 greased 8 ounce custard cups.

      In a small bowl combine the baking mix and sugar, stir in the milk and oil, stirring just until moistened. Drop by spoonfuls over the hot peaches. Bake, uncovered, in a 400 degree oven until topping is golden (about 20 minutes).

      Serve.

      Note: Also, great topped with vanilla ice cream.
