    Post Second Time Around Pork Roast

    ...Make Pork Creole of course!

    2 Onions, sliced thin
    2 Bell Peppers, sliced in strips or chunked
    2 Tblsp Olive Oil or Butter
    2 - 15 oz cans Stewed Tomatoes or use diced
    1/2 teasp Garlic Power or use fresh cloves...about 2
    1/2 to 1 Cup of Tomato Juice or Water
    2 - 3 Cups of cooked left over pork roast, or chops shredded or chunked

    Saute onion and peppers in Oil till onion is just translucent. Add tomatoes and bring to a boil. Reduce heat and simmer about 10 minutes. still in garlic salt and pepper. add pork and tomato juice or water. Simmer till heated through and sauce is thickened slightly.


    Serve over cooked rice or noodles...
