    this recipe is different from all of the others posted. when bulk sausage is on sale, I'll buy it and make this and then freeze it in portions to go with biscuits for breakfast or for dinner over baked potatoes with a bit of cheese or rice or...
    SAUSAGE GRAVY
    1 LB GROUND SAUSAGE
    1 1/2 CUPS SHORTENING
    2 CUPS FLOUR
    1-1 1/2 GALLONS MILK
    1 CAN EVAPORATED MILK
    4 TSP SALT
    2 TSP PEPPER

    2 CAPFULS OF KITCHEN BOUQUET
    First you need a very deep pan to make this because it makes a lot. Put sausage in pan and add 1 qt of water to boil and break up into small pieces. when sausage is cooked thru then drain the water off and return meat to pan. Add shortening and brown meat till a little crispy, add the flour and salt and pepper. Mix well and cook on low heat until the flour is a nice deep brown, but be careful not to burn it. Add about a gallon of cold milk quickly and using a whisk to stir. Stir until it starts to boil, then add the kitchen bouquet and the evaporated milk. Again bring to a full boil and if it needs thinned you can add cold milk until you get it to your desired consistency.
    this reheats in microwave very well. Also because of the way the meat is cooked, it doesn't have alot of meat visible, but it has plenty of sausage flavor.
