    Default Ziti with Sausage and Peppers

    Ziti with Sausage and Peppers
    4 tbs olive oil
    1 onion, halved and sliced thinly
    1 garlic clove, finely chopped
    1 1/2 lb Italian sausage, casings removed and crumbled
    1/4 cup dry white wine
    1/2 tsp crushed fennel seeds
    1/2 cup water
    salt and pepper, to taste

    1 red and 1 yellow pepper, julienned
    1/2 lb pkg ziti
    heat half the olive oil in a deep skillet. Add the onion and garlic. Saute until the onion is wilted, about 4 minutes. Add the crumbled sausage and saute over medium heat, stirring occasionally, until it is nicely colored but has not hardened, about 5 minutes. Pour in the white wine and continue to saute just until the alcohol has evaporated, about 1 minute. Add the fennel seeds and water. Cover and simmer for 10-12 minutes, stirring occasionally and adding a tbs or two of water, as needed, to prevent the sausage meat from drying out. Season with salt and pepper to taste. Heat the remaining oil in another skillet. Add the pepper strips and cook over medium-low heat, partially covred, until completely tender, about 15 minutes. Add the peppers to the skillet with the sausage mixture and toss together throoughly. Cook the ziti according to directions. Drain the pasta, and toss it with the sauce in the pan. Serve immediately. 4 servings = about 1,105 calories.
    after this meal, eat yogurt and rabbit food for three days! LOL!
